EAST AFRICAN CHICKEN SOUP

- Sweat diced onion, finely diced carrot and diced celery in a little oil (not olive oil)
- Add chopped chili, grated ginger and garlic
- Add chicken pieces and cover with water
- Bring to the boil and turn the heat down to simmer. Add lime halves, salt and a bruised lemongrass stalk
- Remove meat from the bones and return to the soup
- Add coconut milk and roast, dessicated coconut
