EAST AFRICAN CHICKEN SOUP

 

  1. Sweat diced onion, finely diced carrot and diced celery in a little oil (not olive oil)
  2. Add chopped chili, grated ginger and garlic
  3. Add chicken pieces and cover with water
  4. Bring to the boil and turn the heat down to simmer. Add lime halves, salt and a bruised lemongrass stalk
  5. Remove meat from the bones and return to the soup
  6. Add coconut milk and roast, dessicated coconut
